Sometimes I Quarantine: with Venellope

Can you guys believe that Wreck It Ralph came out in 2012? I’m still surprised that it came out before Frozen. The movie is so cute, and while we all joked that she might be a princess, this was confirmed in 2018’s Ralph Breaks the Internet. I very much love that Vanellope is completely her own character and her friendship with Ralph is adorable.

Sometimes I Quarantine: with Merida

Oh how special Brave is to me… premiering three days before my 20th birthday, my mom and I saw this together, she was prepared to fall asleep during it, and by the end, we were both in tears! My mom is the most important person in the world to me and it was so special getting to see this movie with her! We’ve watched it a few times again since and I’m thinking it’s time for a rewatch with her!

This was such a fun edit to work out!!

But on to my usual such-eel about the movie… Merida is Pixar’s first and only princess, Merida was inducted very quickly into the Princess Fairytale Hall and the creators were upset with Disney publicists for altering her appearance for the induction–they thinned her face and waist, smoothed her hair, and made her breasts slightly larger, this upset Pixar’s creator because she based the images of Merida on her own daughter. Brave is set in Scotland and tells the tale of a girl who just wants to be free over being a princess. She seeks the help of a witch to change her fate, but ends up nearly costing her family dearly. In the end, both Merida and Queen Eleanor learn a bit about each other and respect for each others views.

I got this Harris Bear from the Brave movie at my first (and only) trip to Disneyland in the summer of 2012 just a few weeks after the movie came out (you know, back when they actually produced march on time for the movies to come out). I introduced Dublin, my niece, to Brave and it’s been one of her favorites ever since! A few years later, I got to spring break with my niece at my mom’s house and we snuggled up to the same bear! I have all 3 brothers and the mama bear, they are the best stuffed animals! Actually, during that spring break, she was listening to something on her headphones and I was listening to “Touch the Sky” on a speaker, she ripped off her headphones and said “I HEAR BRAVE!” and we danced to the soundtrack. That is one of the reasons why I will always love Brave.

One more quick story… It’s amazing how social media can connect people. One of our friends’ girlfriends (Elizabeth) used to work at WDW, and we’d chatted about it a few times, she played a princess, I thought it was super cool, but didn’t want to annoy her about it. We met in around 2018.

A few months ago, I posted these pictures of meeting Merida at Magic Kingdom in 2012!! (btw I was sooooooo excited and I’ve been so sad that I haven’t had time to meet her again!) And Elizabeth comments on this picture… IT WAS HER! How crazy that I met her as Merida years before she ever met her boyfriend who is our friend?! Day 21: Brave (2012)

I was having a really rough day when we watched Brave, **it had hit the fan at work throughout the day, even though it was a weekend, my Old Navy package was mis-delivered (but they had great customer service! UPS’s customer service? not so much), and I was exhausted! I took a two-hour nap in the middle of the day! Finally we got up, took Meeko for a walk, and just spending an hour in the sun completely turned around my mood!! I wasn’t really in the mood to put together a whole Bound though (because some of my items I wanted were in that missing package), so I pulled out the only Brave T I own, and made my hair as big and curly as I could. I don’t feel like I was cheating though because I did do a ’90s Merida Bound back in February and I’m sharing the bound breakdown with you below!

While not Scottish, Chicken Pot Pie felt like the perfect homey dinner for this Pixar Princess. I love this Stella Parks recipe for double-crusted chicken pot pie, we follow it to a T!

We put Meeko in a backpack, tucked in to a fluffy sweater, and strapped him to my chest. He was hesitant at first, but in the end seemed to really enjoy the fresh air and sunshine!!

Sometimes I Quarantine: with Tiana

In 2009, Tiana premiered as Disney’s first new princess in more than a decade, not since Mulan in 1998 had a princess hit the big screen– and Disney did it in a big way. Not only was Tiana Disney’s first black princess, most modern princess (set in the 1920s)– and let’s be real: most relatable princess — but Princess and the Frog was also Disney’s first hand-drawn film in over five years! (compare the animation style of PATF to Tangled and you’ll see what I mean) Tiana embraces hard work, prioritizes her future, and proves to be not only a keen business woman, but a fierce friend.

My personal favorite thing about Tiana though, is how much she cooks; my fiancé, Kyle, is a whirlwind in the kitchen, but every once in a while, I like to dabble in baking, and if I do say so myself, these beignets are the best thing that I’ve made in a long time! Scroll down for the recipe for these fluffy delights, delicious gumbo, and if you’re really looking to round our your stroll down Bourbon Street at home, I’ve also included our recipe for a Hurricane.

Sometimes I Quarantine: With Princesses! This series within a series really started as a way for me to keep my spirits lifted while completely socially distancing. Watching the movies gave us something to do during that afternoon slump, trying to think of an activity to match gave us another (we don’t always have a matching activity, but we’re trying!), taking the movie in to account while deciding what to eat that day helps us think of fun and new ideas for food options, and doing a daily DisneyBound encouraged me to wear more than just PJs while working from home! I highly encourage the last one, it’s been super fun- if you want to see any other DisneyBound outfits that I’ve done, you can find them here!

Day 19: Princess and the Frog (2009)

Breakfast: Beignets & Cafe au Lait

The perfect beignet is light, fluffy, fried on the outside, with a big air pocket on the inside, and covered in a bonkers amount of powdered sugar. They sound complicated, but are actually super simple to make at home (and way better than the beignets at Port Orleans)

We edited this recipe for “The Best Authentic New Orleans Beignets Recipe” by Chef Billy Parisi in partnership with King Arthur Bread Flour. But only just barely, so feel free to use his recipe too! Total time is about 2.5 hours. I prepped the dough early in the morning, and let it do a 90 minute rise while we went on a walk for the whole time (“earning” our beignets) then came back and got to rolling & frying!

Edited to add: we fried up about half and then froze the rest. To re-fry, remove from freezer and allow to come to room temp + rise (this may take up to 2 hours). Fry and enjoy as directed below.

USE THIS
• 8 fl oz (1 cup) warm water (105-115 * F)
• 5 g (1 3/4 tsp) instant yeast (such as SAF Instant) (or 2 tsp active dry yeast)
• 67 g (1/3 cups sugar) + 13 g (1 Tbsp) granulated sugar
• 5.33 fl oz (2/3 cups) whole milk
• 1 large egg + 1 yolk
• 43 g (3 Tbsp) melted unsalted butter
• 6 g (1 tsp) sea salt
• 18.5 oz (4 1/3 cups) all purpose flour (thank goodness we were able to find some!) + more for kneading + dusting
• peanut (or any neutral) oil for frying
• powdered sugar (more than you think you need, imagine how much a 4-year old would want to use, and plan for at least that much) *note: organic powdered sugar is less gritty because it uses tapioca starch instead of corn starch, but during quarantine, whatever baking supplies you can find will be fine.

THESE THINGS WILL MAKE YOUR LIFE EASIER but are totally not necessary, you’ll just have to do some kneading by hand and rougher measurements

French rolling pin

DO THIS
1. Combine yeast, 13 g sugar, and 8 fl oz water in the bowl of a stand mixer. (The water should register between 105 and 115 on a thermometer, a little over 110 is okay because the bowl will cool down the water pretty quickly, but don’t let your water get over 115 or it will kill the yeast.) Whisk together (by hand).
Note: If you’re using instant yeast, this step isn’t strictly necessary, but it never hurts. If you’re using active dry yeast, this step is critical and you’ll need to wait about 15 minutes (min 7) until the top is frothy — like the head of a beer — which means the yeast has fed and it’s ready to help your beignets fluff up!
2. Add remaining sugar, milk, egg + yolk, & melted butter. Whisk (by hand) until combined.

3. Attach the bowl to the mixer with the dough hook. Add salt + flour and mix on medium speed (around a 4 on a KitchenAid) for 2-3 minutes until it’s smooth and pulling away from the sides of the bowl.

4. My dough comes out wet since the original recipe calls for by volume measurements (which are notoriously unreliable). I tossed a big heaping handful of flour onto the counter (like seriously, a whole handful) and kneaded by hand for a few minutes. Dough is forgiving, it knows what it’s supposed to be and how much flour it needs, it won’t take on more than it can handle. So add flour until your dough becomes smooth (should be roughly 1/2 cup flour).

Note: if you used volume measurements, you may have a different experience, but I would suggest airing on the side of caution and not going crazy with the flour at the beginning because you can always add more flour, it’s harder to add more liquid and fats.
Note: this is where I use a dough scraper to get all of the dough out of the bowl, not only does it ensure that I got every last drop, but it makes cleaning the bowl afterwards wayyyyy easier.

5. Cover the dough (I have a lid for my bowl, but you can use plastic wrap or a towel) and let it sit at room temperature for about 90 minutes or until it’s about doubled in size.

A few tricks: (1) letting dough rest on top of the dishwasher while it’s running (a good time to clean your kitchen and wash the big ‘ole mess you just made mixing dough); the heat from the dishwasher helps the dough rise since your house is probably chilly in the morning; (2) take a picture of your dough beforehand, especially if you’re using a glass mixing bowl, it’ll help you see how much your dough has risen, it’s also super fun to actually see the difference.

…once doubled in size (roughly 90 minutes later)
start heating your oil, you’ll want it to register 350*F on your thermometer
➝ too hot and you can burn the beignets | too cold and they’ll get soaked in oil before they have a chance to cook)

6. Coat a large clean surface in flour & pour out the dough (the dough scraper might come in handy again). Top the dough with more flour. Roll out until it is 1/2″ – 3/4″ thick (the measurements on the side of the bench scraper are useful).

7. Using a pizza wheel or a pastry wheel, cut 1″ – 2″ ‘squares’ of dough. (do not use a knife directly on granite or stone!

➝ (*note: I took the wonky pieces from the edges to make a Mickey Mouse shaped beignet, but if you have a mickey cookie-cutter, this would be a good time to use it!)

8. working in batches of 4-5, gently place the beignet squares in the oil (don’t drop them or splash oil on yourself!). Fry for 90 – 120 seconds on each side they should be golden brown.

9. Remove the fried beignets from the oil & rest on a paper towel.
➝ all out of paper products during quarantine? a clean smooth dish towel will work just fine! seriously, this is how we used up the last of the paper towels in our house, haha.

10. Pile them on a plate and coovvvverrr in powdered sugar.

ENJOY!

Dinner: Authentic Gumbo

For our gumbo, Kyle used Daniel Gritzer’s recipe on Serious Eats “Cajun Gumbo with Chicken and Andouille Sausage.” *Note that you’ll need Pure Ground Gumbo Filé which you can find here on Amazon.

Cocktail: Hurricane

*Note: this is an insanely strong drink… We usually split one or I’ll make one and have it for my first two drinks! We also make our own syrups and squeeze our own juices(because what else are you going to do during quarantine??), but you can absolutely make these with store-bought juice & syrup. Actually– if you’re trying to recreate this Bourbon Street Classic, you’re probably just fine with store bought! This was developed in the 1940s, so about 20 years after Tiana’s time, but since they’re both from The Big Easy, we’re just going to let the good times roll.

USE THIS
• 60 ml (2 fl oz / 1/4 cup) white rum
• 60 ml (2 fl oz / 1/4 cup) dark rum
• 30 ml (1 fl oz / 2 Tbsp) freshly squeezed lime juice
• 30 ml (1 fl oz / 2 Tbsp) freshly squeezed orange juice
• 15 ml (0.5 fl oz / 3 tsp / 1 Tbsp) Passionfruit Juice/Pulp/Syrup (really whatever you can get your hands on will taste great!)
• 15 ml (0.5 fl oz / 3 tsp / 1 Tbsp) Sugar Syrup*
• 15 ml (0.5 fl oz / 3 tsp / 1 Tbsp) Grenadine**
• 5 ml (1 tsp) Orgeat***
• fruit + maraschino cherry, for garnish (+ extra cherries for snacking)
• 10 ml (2 tsp) 151 proof rum, for floater

DO THIS
Combine all ingredients — except for garnish + floater — and shake over ice. Notice how much liquid there is in this recipe — almost 8 full ounces! — it’s huge. The recipe is technically for one Hurricane, but we typically split this because, also, 4 oz of rum + 10 ml of 151 is a llloootttttt of alcohol for one drink! Make sure to serve it over plenty of ice, & if you decide on a floater, use a straw.

*This is 1/3 of the above Hurricane recipe!

Sometimes I Quarantine: with Cinderella

Have you seen Cinderella 2? It’s a collection of 3 short stories told into one movie about the year following the first film. It premiered in 2002, and looks like it could be one of the Barbie movies–same animation style.

The Glass Slipper

We’ve been making a lot of tiki cocktails during quarantine, and it was super tasty!

GLASS SLIPPER RECIPE

• 60 ml (2 fl oz / 1/4 cup) rhum agricole (sugar cane rum)
• 10 ml (2 tsp) elderflower liquor (e.g. St. Germaine or St. Elder)
• 20 ml (3/4 fl oz / 4 tsp) freshly squeezed lemon juice
• 15 ml (3 tsp) vanilla syrup* (a dash of vanilla extract and 3 tsp 1:1 simple syrup should do the trick if you don’t want to make the syrup below)
• 10 ml (2 tsp) 151 proof rum

Combine the rum auricle, elderflower liquor, lemon juice, & vanilla syrup and shake with ice; serve over ice and float the 151 over the back of a spoon.

VANILLA SYRUP RECIPE

• 1 vanilla bean, split open + seeds scraped (save the pod)
• 440 grams (15.5 oz / 2 cups) sugar
• 500 ml (17 fl oz / 2 cups) water
• 1 tsp vanilla extract

Combine vanilla bean seeds + empty pod, sugar, and water in a saucepan over medium-high head. Bring to a boil until sugar is dissolved. Remove from heat, mix in vanilla extract and set aside too cool. Store in a jar in the fridge for up to one month.

The Cinderella sequels were…. okayyy…. but the Little Mermaid sequels were AWESOME!!! Sometimes I Quarantine: with The Little Mermaid!

Sometimes I Quarantine: with Mulan

Mulan premiered in 1998 as Disney’s eighth princess and third multi-cultural princess, and once again: addresses the issues of gender in a way that kids can comprehend! Based on the ballad of Hua Mulan, it is said to be set sometime in the late BCE/early CE (is that still a thing? or have we gone back to calling it BC/AD?). Anyhoo, we sort of ignored how long ago the tale is set because we really wanted to whip up some Szechuan Chinese dishes and those didn’t come to China until the discovery of “the new world” (aka around Pocahontas’ time period)– hellooo peppers! While it too is sadly lacking any real attraction at the parks, Mulan did have a sequel that holds up pretty nicely, even if it s the most predictable thing. Mulan stood out as a common girl from a nice family who rose through the ranks and achieved notoriety not for royal blood, but for becoming a war hero. While not a princess by birth or by marriage, she was inducted into Disney’s Princess Hall and therefore is a princess.(Don’t get me started on this, I’ve had way too many rants with my girlfriends about what makes a ‘princess’.)

Disney’s first Adventure Princess premiered three short years before Mulan, Sometimes I Quarantine: with Pocahontas!

It took over a decade for Disney to return to creating new princesses, but when they came back to the big screen, they did it in a big, American way! Sometimes I Quarantine: with Princess and the Frog coming soon!

Sometimes I Quarantine: with Pocahontas

Airing in 1995, Pocahontas was Disney’s seventh princess, first that didn’t get a happy ending (oops, spoilers?), and first adventure princess! Premiering at the height of the renaissance of Disney Animation, Pocahontas tackled issues about race and gender in a way that kids could understand. While it didn’t spawn any rides or attractions (how do we not have a “paint with all the colors of the wind” walk-through movie experience or something??), Pocahontas definitely gave us one of the BEST soundtracks and stunning animation (for the time).

Meeting Pocahontas was definitely a highlight of my July 2018 Disney trip with my family!

Sometimes I Quarantine: With Princesses! This series within a series really started as a way for me to keep my spirits lifted while completely socially distancing. Watching the movies gave us something to do during that afternoon slump, trying to think of an activity to match gave us another (we don’t always have a matching activity, but we’re trying!), taking the movie in to account while deciding what to eat that day helps us think of fun and new ideas for food options, and doing a daily DisneyBound encouraged me to wear more than just PJs while working from home! Day 8: Pocahontas (1995)

I don’t have any painting supplies that I wanted to use right now, & Paint by Numbers is a great idea, but I pulled out some coloring books and just colored while watching the movie, it was super relaxing!

I think every time I do one of these posts, I have a new favorite, but seriously, they are gorgeous & sparkly without being over the top. Meeko DisneyBound / Workout Outfit

Whenever I am doing a DisneyBound of an animal or inanimate object (like Mrs. Potts) with a distant top, like the ears on an animal, I love wearing a boyband to simulate the ears, I wear these Bowbands a lot normally, bt they’re especially great for this purpose! I’ve recently joined with Chronicles of a Pixie to get y’all a 10% discount on her awesome products! The bows can slide form one side to the other, headbands area actually comfortable, and the bows can also slide off to wear just the cloth headband by itself, like I did for my Briar Rose DisneyBound. I also loved adding the sunnies with the Meeko Bound for the “mask” around a raccoon’s eyes.

We can all agree that this is, hands down, the worst sequel that Disney has ever made. Not only does nobody care about the historical aspects of the movie, but it’s a huge bummer that Pocahontas and John Smith don’t end up together– AGAIN!

Sometimes I Quarantine: with Aladdin & Jasmine

Princess Jasmine was Disney’s sixth princess, debuting in 1992, following right on the tails of Belle and just before Pocahontas. The movie Aladdin also had two sequels: Return of Jafar (1994) and King of Thieves (1996). Since we watched in chronological order, Aladdin was our 6th movie day, Return of Thieves was Day 7, and King of Thieves was Day 9. These movies spawned video games, a VR ride at DisneyQuest, the Magic Carpet ride in Adventureland, an animated series, and a live-action remake where Jasmine is way more badass! More importantly, there are countless DisneyBounds that I got to create as part of this, and Kyle was really in to the food!

Rewatching the Aladdin movies was really fun because Kyle actually watched them with me!!

Lamb Tagine

We used this recipe from New York Times Cooking to make an amazing Lamb Tagine flavored with slivered almonds & dried apricots. *note generous use of the term “we” … it was all Kyle! I also highly recommend The Souk MB for Tagines and other ceramics, they are beautiful and her customer service is impeccable!!!

Blue Hawaiian Cocktail aka “The Genie”

Ours looks green because it’s made with fresh blended pineapple that wasn’t strained, if you use store-bought or white pineapple, it could be more blue!

Recipe copied from Tiki Cocktails by David Adams:

  • 30 ml (1 fl oz / 2 tbsp) white rum
  • 30 ml (1 fl oz / 2 tbsp) vodka
  • 15 ml (3 tsp) blue curaçao
  • 90 ml (3 fl oz / 6 tbsp) pineapple juice, fresh if possible (*if you don’t have access to fresh, juice works just fine, but if you can find some frozen pineapple to thaw & blend, that’s great!)
  • 30 ml (1 fl oz / 2 tbsp) freshly squeezed lime juice
  • 10-15 ml (2-3 tsp) simple syrup (*to taste)
  • pineapple wedge, maraschino cherry, and cocktail umbrella, for garnish

Shake the ingredients (minus the garnish) with ice and strain into a glass with ice! Traditionally it’s served in a tall glass on ice with the garnish, but as you can see, we each used our own glasses. *We use this shaker set, but if you don’t have a shaker, a mason jar (or spaghetti sauce jar!) works just as well!
